Cinnamon Streusel Coffee Cake Bread Recipe

Ingredients

  • For the Streusal:
  • 1/3 cup Bisquick mix
  • 1/2 cup packed brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/4 cup firm butter or margarine
  • For the Coffee Cake:
  • 1 3/4 cup Bisquick mix
  • 3 tablespoons granulated sugar
  • 2/3 cup milk
  • 1 1/2 teaspoons vanilla
  • 3 eggs

Instructions

  1. First things first - Heat your oven to 350°F.
  2. While your waiting, spray a loaf pan with cooking spray. In small bowl, mix 1/3 cup Bisquick mix,the brown sugar and the cinnamon.
  3. Next, cut in the butter using a pastry blender or fork, until mixture is crumbly. Set aside until needed.
  4. In a medium bowl, stir all of the coffee cake ingredients from the list until all blended. Then spread the mix into the pan, and sprinkle with topping.
  5. Bake it up for 25 to 30 minutes or until golden brown. Store tightly covered, to make sure it's still totally delicious in a day or two.

Amp Up Your Iced Coffee with International Delight… Last week I shared a recipe with you ladies – my fave way to enjoy iced coffee at home with simple prep, the Candy Bar & Cookies Iced Coffee drink, made with International Delight Iced Coffee and creamers. Sooooo good, especially when it’s been so super hot out every day. It’s the perfect partner for my morning routine – I head out to the patio, with my drink and my laptop, to get some work done before the kids get up. And, since I am a total coffee junkie, and love how versatile these yummy iced coffee cartons are, I decided to use them to jazz up one of my fave brownie recipes too.

I made these amazing brownies yesterday for a BBQ that we had – and they were ALL gone within a few minutes. I’m bummed looking at these pics again, because they’re all gone. Definitely a recipe that I’ll be making again! They were perfect – just a hint of crispy chocolate crunch at the edges, and soft and gooey in the middle. I’m hungry just telling you about them!!

I’m sure that most of you are familiar with the International Delight creamers, right? Super delicious must have’s for any coffee-lovers kitchen. And now there’s an awesome new option from International Delight too – Iced Coffee in a carton, so you can save money by having your own perfectly blended iced coffee drink at home. I had NEVER liked any pre-made coffee drinks from the grocery before – too sweet, too artificial, or too bland. But these cartons are so great – I buy a couple of them every week now. If you haven’t tried them yet, you are so missing out.

There are so many awesome ways to use iced coffee and coffee creamers in your favorite recipes – and there are SO many flavors of creamer that you can create a ton of fun new flavor combinations. I use creamer when I make french toast, to add an extra twist. I love mixing creamers or coffee into boxed cake mixes too – That Peppermint Patty was crazy-good when mixed into a chocolate cake mix and topped with peppermint frosting. How to make Homemade Irish Cream Mocha Brownies

If you have your own favorite brownie recipe, you can use that – just substitute the water with creamers and iced coffee instead. Or, follow my easy peasy recipe here to create these super delicious brownie bites – but you might want to double it. These go fast!

Homemade Irish Cream Mocha Brownies

Ingredients

  • 5 tablespoons butter
  • 2/3 cup sugar
  • 1/3 cup unsweetened cocoa
  • 1 egg
  • 3 tablespoons Mocha flavored International Delight Iced Coffee
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 cup flour
  • 1/2 cup of International Delight Irish Cream Creamer

Instructions

  1. Heat over to 350 degrees.
  2. Melt the butter in a pan over low heat.
  3. Remove from heat, and then stir in sugar and cocoa.
  4. Add the egg and iced coffee; mix well.
  5. Add baking powder and baking soda; mix well.
  6. Then add flour and 1/2 cup coffee creamer, mixing well after each one.
  7. Fill cupcake liners with batter. Bake for 22-24 minutes. Eat & Enjoy!

Quick tip: Using an ice cream scooper to put batter in the cupcake liners makes your job SO much easier!

How to Spice Up a Basic Sugar Cookie

I admit it – sweets are my weakness. But, while I love to bake – I have much more enthusiasm than skill, lol. So I rely on lots of clever shortcuts, and am more of a Semi-Homemade type of girl. Buying store-bought desserts is no fun – but jazzing up some cookies from a mix is something that I CAN handle – and it makes me feel like less of a failure in the kitchen. If you’re not cooking show material either – or maybe are just looking for some simple ideas to use when you don’t have time for baking from scratch, keep readin’ sister.

McCormick Look Book Baking Inspiration

For those of you who are better homemakers than I am, and regularly bake desserts for your family from scratch – you will find some AMAZINGLY delicious ideas in the new McCormick Look Book. It’s filled with perfect picks for spring entertaining – and you can search by Cakes & Cookies, Brunch Gathering, Spring Cakes, and more. I pinned a TON of good stuff onto my cakes, cookies, pops – oh my! board, and you can find more yummies on the Spring Baking Pin-spiration board from McCormick too. {Because you needed another reason to hop onto Pinterest today, right?} Since there were so many great ideas there, I used them to inspire some shortcuts to great treats, using some of my favorite supplies from McCormick! I tested out a ton, and let the family pick their favorites. Here are the winners:

  1. Cinnamon & Sugar: I loved the idea of this cookie; it reminds me of a snickerdoodle. McCormick has a great recipe in the Look Book that you can try. For a simplified version – use refrigerated sugar cookie dough, and simply roll it in a mixture of sugar and McCormick Cinnamon, then bake as directed. Yum!
  2. Colored Cookies: This is a similar idea – use the great recipe in the Look Book for Colorful Sugar Cookies; or for an easy alternative, substitute refrigerated cookie dough, but follow the steps to make the colored sugar using McCormick’s easy to use food coloring. This would be fun to match a kiddo’s birthday party colors!
  3. Lemon-Coconut Cookies: This one isn’t from the Look Book – but I wanted to create something fun for spring using McCormick’s Lemon Extract. I used a boxed sugar cookie mix, then added 1 tsp of the extract, and a 1/2 cup of toasted coconut. Soooo good! {Also, you can experiment with using ANY of McCormick’s extracts into a sugar cookie mix – they’ll fool people into thinking you made them from scratch.}
  4. Colorful Cookie Glaze: Want to add a glaze to your cookies? You can use this great recipe from the Look Book for Cookie Glaze – or if you need a lazy girl option, you can simply add a few drops of their food coloring to regular store-bought frosting, then melt it a bit in the microwave. It’ll pour on just like a glaze!

So, whether you’re a totally skilled baking ninja, a busy mom just looking for some short-cuts to save time, or a bit of a kitchen klutz like me – you’ll find some great spring baking inspiration and ideas in the new McCormick Look Book!
