10 Minute Italian Meatloaf Recipe

This is a Sponsored post written by me on behalf of McCormick & Company. All opinions are 100% mine.

Every mom knows how important dinnertime is – a chance to connect as a family, hear about everyone’s day, and slow down from the hectic frenzy of our busy days. And we all also know that meals cooked at home are more affordable and healthy. But homemade doesn’t have to mean time consuming! McCormick recently did a study using search data from Google to find the top 10 most searched-for family recipes – and put together some super simple versions using their spices, to give busy moms some quick dinner options they can feel good about serving.

Italian Meatloaf Recipe

Since I haven’t made meatloaf before – ever – I decided to give this one a shot. I love anything Italian, and this sounded like a great twist on a family classic. I had Mike help me prepare it – since he’s the real pro in my kitchen. It was seriously so crazy-easy, took about 10 minutes of prep time – and an hour later we had a totally delicious dinner with hardly any clean up. Now that’s what I’m talkin’ about. [Read more…]

How to Make Super Awesome Kid’s Lunches

Thank you to Mott’s® for sponsoring this article. Grab goodness on-the-go with Mott’s®.

“One thing I had learned from watching chimpanzees with their infants is that having a child should be fun.” – Jane Goodall  One of the main reasons that I wanted to be a work at home mom was that I wanted to be here to spend time with Abby every day. {You can read my story of how I got started here, on Start-Up Nation.} Then about a year ago I realized that I was spending way too much time working, and not enough time being a mom. I caught myself saying things like, “Not now,” or “in a little bit, mommy’s working” – way too often. So, I made a point to take afternoons off, and have that be “Me & Abby” time.

How to Make Easy Peasy Monkey Cupcakes

These cupcakes were as fun as a barrel of monkeys… Well, that’s probably because they were a tray of monkeys, almost the same thing :) I threw a big double birthday party earlier this summer for the kiddos – my little girl turned 3, and we did a DIY Disney Princess party for her and the little girls, then I created a jungle-themed birthday party for the little boys. {Although of course there was lots of overlap – kids love everything.} I’m just finally getting a chance to show a few of the fun things we did for the jungle theme – so to start, I’ll show you how to make super easy peasy monkey cupcakes. They’re so simple and quick that you can you make them any time – parties, lunches, weeknight desserts – whatever!

Frozen treats aren’t just for summer. But because it IS summer, and I just got done trying a big ol’ pile of amazing frozen goodies, I wanted to share a list of our favorites. Summer is so hot right now…

For us here in Washington state, the summer has been as hot as I can remember! Thank heck for central air and a pool – I tell ya. But still – on hot summer evenings, I have little appetite. I like some simple soup, a crunchy wrap, or a nice cold salad. But something I’m always in the mood for no matter how hot it gets is a frozen dessert – whether it’s fruity, chocolatey, or ice creamy – it hits the spot on a super hot evening around here. {I know, I know… Most people picture Washington and think of rainy, cold, cloudy weather. That’s Seattle, on the coast. We’re in Centra Washington. It’s dessert, hot, dry, and totally different!} Watch the video below to see a little bit of our summer fun – and how we cool off with our favorite frozen treats. Then keep reading below to learn about all six of what I think are THE best goodies you can buy in the freezer section of your local grocery store….

Deep Fried Waffles with Strawberries and Cream

Deep fried is one of my favorite flavors…. Lol – it’s true. And yes, that’s why I’m working so hard to live healthier and eat better, so that I can lose the weight I need before we open the pool for the summer. But, even though I’m working on losing weight – I still believe that we all need to splurge from time to time. I’m a dessert lover, but I don’t waste calories on sweets that aren’t even all that good – I’ll save up and splurge on something truly amazing. And lemme tell ya ladies – These deep fried waffles topped in fresh strawberries, ice cream, chocolate, and whipped cream will rock your darn socks off. No lie. Check it:
