Homemade Irish Cream Mocha Brownies – #IcedDelight

Amp Up Your Iced Coffee with International Delight… Last week I shared a recipe with you ladies – my fave way to enjoy iced coffee at home with simple prep, the Candy Bar & Cookies Iced Coffee drink, made with International Delight Iced Coffee and creamers. Sooooo good, especially when it’s been so super hot out every day. It’s the perfect partner for my morning routine – I head out to the patio, with my drink and my laptop, to get some work done before the kids get up. And, since I am a total coffee junkie, and love how versatile these yummy iced coffee cartons are, I decided to use them to jazz up one of my fave brownie recipes too.

Homemade Irish Cream Mocha Brownies

I made these amazing brownies yesterday for a BBQ that we had – and they were ALL gone within a few minutes. I’m bummed looking at these pics again, because they’re all gone. Definitely a recipe that I’ll be making again! They were perfect – just a hint of crispy chocolate crunch at the edges, and soft and gooey in the middle. I’m hungry just telling you about them!!

tons of iced coffee

International Delight Iced Coffee

I’m sure that most of you are familiar with the International Delight creamers, right? Super delicious must have’s for any coffee-lovers kitchen. And now there’s an awesome new option from International Delight too – Iced Coffee in a carton, so you can save money by having your own perfectly blended iced coffee drink at home. I had NEVER liked any pre-made coffee drinks from the grocery before – too sweet, too artificial, or too bland. But these cartons are so great – I buy a couple of them every week now. If you haven’t tried them yet, you are so missing out.

recipes using iced coffee and coffee creamer

Cooking with Iced Coffee and Creamers!

There are so many awesome ways to use iced coffee and coffee creamers in your favorite recipes – and there are SO many flavors of creamer that you can create a ton of fun new flavor combinations. I use creamer when I make french toast, to add an extra twist. I love mixing creamers or coffee into boxed cake mixes too – That Peppermint Patty was crazy-good when mixed into a chocolate cake mix and topped with peppermint frosting. Check out the #IcedDelight tag on Twitter too, to get more baking inspiration. Amazing ideas.

Summer Salsa Recipes – #FoodFunHop

I admit it… I’m a bit of a salsa junkie. When we got out to eat at our favorite Mexican restaurant, I spend more time eating the chips and salsa than I do on my actual dinner. We usually make our salsa at home, since there haven’t been too many store-bought varieties that I like much. They never taste as fresh as I’d like, and most of them are honestly pretty bland and boring.

wholly salsa rocks

Dip it. Top it. Spread it. Love it.

I am now a believer in store-bought salsa, after trying the amazingly unique flavors from Wholly Salsa {yep, those same folks that make Wholly Guacamole!} – This stuff is goooood. With flavors like Red Pepper and Mango Salsa, Avocado Verde, and  Pineapple Salsa – they totally get your creative cooking juices flowing. I’m thinking some totally delicious Luau Burgers at our next BBQ party…

Wholly Guacamole Event - #foodfunhop

Taste it. Try it. WIN it!!

I’ve partnered with a couple of the most creative bloggers I know – This #FoodFunHop Event is hosted by Shy Babies & Little Inspiration  – and you’ll find a super fun linky after the giveaway form, where you can hop along and see all of the other amazing recipes created with these totally delicious salsas. Warning, it’s going to make you hungry! Mmmmmm…… So, use the easy peasy Rafflecopter form to get your entries in – one lucky winner will get a HUGE Summer Salsa Kit filled with all of the yummy products you see in the pic above. Then take a few minutes to check out the other recipes – and enter to WIN again on every single site!!! How fun is that, right?

4th of July Salsa Dip

4th of July Salsa Dip

We put this little dip together the other day for a BBQ – the kids helped me, which is why it’s a little, um, less the perfect, lol. For the 4th, we’ll do a big dish of this – I’m going to make it a 7-layer dip, which is one of our favorites. The top layer here is a white Queso dip, but this would work great with a cream cheese or sour cream layer on top too. For the stripes I put the salsa in a plastic ziploc baggie, cut the corner off, and piped it on like frosting. We added some olives for stars { definitely needed another row of those!} and star-shaped tortilla chips. The chips are super simple – use a cookie cutter to cut stars out of tortillas, brush ’em with a dab of butter, the bake ’em at 350 degrees for 5-10 minutes. Easy peasy!

How To Host a Frozen Yogurt & Cupcakes Party – #TCBYGrocery

Celebrate Summer during National Yogurt Month – with TCBY Frozen Yogurt! #TCBYGrocery – As soon as the weather gets warm around here, we start entertaining a few nights a week. I love putting together a good party – creative decorations, fun games, and good food. Since this month is National Yogurt Month, I wanted to celebrate it with a little Frozen Yogurt and Cupcakes party, and what better frozen treat to use then then everyone’s favorite, TCBY!

cupcakes and frozen yogurt party

“Summer afternoon – Summer afternoon… the two most beautiful words in the English language.” – Henry James

We’ve had mostly beautiful weather lately, and are so anxious to get our pool opened up for the season. I had planned a few parties already, and have had people over several times over the past two weeks – but unfortunately, the summer grand opening of the pool keeps hitting big ol’ road blocks. Ugh. First, we were told that we needed a new pool pump, which is a big expense. We ordered one in, waited to have it installed… Only to find out that wasn’t even really the problem. Double ugh. The next week we had several repair companies here, lots of work done, and still no luck. Hopefully by this weekend we’ll finally be able to enjoy the pool at our next party! Definitely looking forward to it – it’s getting darn hot, super quickly around here. A dip in the pool sounds glorious…

TCBY frozen yogurt at walmart

Celebrate Summer with TCBY Frozen Yogurt!

I wanted to put together a fun little shindig for the kiddos, so we headed out to Walmart to pick up the new TCBY Frozen Yogurt – and as you can see, it must have been on everyone else’s list too. The selection was almost sold out – crazy, right? But, there were enough choices for me to pick out a good selection of flavors to please everyone. {Because of course, every kiddo in my house has a different favorite that the MUST have, lol.} I’m a sucker for great packaging, and I just adore the bright, clean, cheerfully designed cartons for TCBY. I also picked up a few extra goodies – candy, cupcake mix, sprinkles, and cones. I wanted to bump things up a notch, make it more fun than a typical after-dinner bowl of ice cream. So I grabbed up a bunch of good stuff, and planned out some super fun ideas.

TCBY Frozen Yogurt

“A single sunbeam is enough to drive away many shadows.” – St. Francis of Assisi

Seriously – can’t you almost taste how good this stuff is, just by looking at the picture? I love ice cream, but to be honest, I’m not too picky about the type. One thing that I do appreciate is a frozen dessert that has big pieces of chocolate or fruit in it – big enough to really taste it. And that’s hard to find. Well – take a look at those deliciously juicy fruit chunks in the Tropical Mango Peach, and the giant bites of toffee and chocolate in the other blends – Chocolate Chunk Cookie Dough and English Toffee Crunch. We took a quick bite to sample each one, then I got to work on setting up a fun set of treats for the kids to enjoy after a fun day in the sun, and a simple dinner on the patio – {Salad, baked chicken, and pasta salad.} Lovely.

TCBY dipped cones

“Celebrate summer: sun-drenched days and starlit nights.” – Gooseberry Patch

I started by making dipped sugar cones – I melted down some Wilton Candy Melts in the microwave, and tinted them pink. I rolled the edges of the sugar cones in the melted white chocolate, then rolled ’em in sprinkles. Super simple, but super fun! Then I set them up in dessert glasses to cool, so the candy could harden.

cupcake display

“Be like the flower, turn your face to the sun.” – Kahlil Gibran

Next, I created these fun little cupcakes… I just used some small plastic party cups, filled them halfway with jelly beans {one of our favorite family candies} and set my vanilla bean cupcakes inside each one. Then I topped the cupcakes with the Wilton Pearl Sprinkles, and a few more jelly beans to match the holders. It was a random idea, but I think it came out really fun!! I’ll definitely be using variations on this for other summer parties – I’m thinking some ribbon around the cups next time would be a great touch…

TCBY ice cream faces

“A perfect summer day is when the sun is shining, the breeze is blowing, the birds are singing, and the lawn mower is broken.” – James Dent

The kids and I enjoyed our treats out in the yard next to the patio, where we’d been playing in the kiddie pool and slip n’ slide all day. {It’s a good time, but tough to enjoy quite as much when you have a big in-ground pool in view, that you’re just dying to get to use!} See little mister’s messy frozen yogurt face? Yep, he LOVED the TCBY Frozen Yogurts!!! I wanted the total deliciousness of the ice cream to come through, so I kept them simple – a couple big scoops of TCBY in the dipped sugar cones, topped only with a few fun sprinkles. Partnered with the jelly beans and cupcakes – and of course, a big glass of ice cold milk for each of us – I have to say it was pretty much the perfect end to a summer day.

how to make candy coated cones

“Be intent upon the perfection of the present day.” – William Law

Aren’t these so fun? I can tell ya, it’s honestly not that often that we all agree on something around here… Due to a series of crazy life changes, we ended up with a big household – Me, Mike, and Abby. My brother and my two little nephews. And Grandma too… Plus SIX little dogs! So no matter how great I think an idea is for dinner, dessert, snacks, anything – there’s SOMEONE who’s not happy. But these TCBY Frozen Yogurts were a hit with every.single.one of us. Epic, right? {And yes, when I say EVERYONE, I mean it. The dogs were all dying for a bite, and most of ’em got at least a lick or two that dropped to the ground…. And I saw a lot of little wagging tails :)

How Strategic Grocery Shopping Earns You FREE Ice Age Movie Tickets #JuneDairyMovies

So… Last week I told you about our super fun Tacos and Floats summer party that we had. I set up a big ol’ taco bar, filled with a ton of toppings {including super yummy dairy must-haves like shredded Tillamook cheese and Dairygold sour cream} – and we topped that off with super cool root beer floats for dessert. It was a great night with the family – and it was made even greater by the fact that shopping for those dinner ingredients gave me a free set of movie tickets to take my family to see Ice Age, Continental Drift next month! How cool is that, right?

how to get free ice age tickets during june dairy month

June Dairy Month at Safeway = Free Family Movie Tickets!

Pretty much all of us are moms on a tight budget, right? The economy is not-so-hot, incomes are not-as-high, and prices on just about everything are ever increasing. That makes it tough on us moms to keep up. But – some meal planning and smart shopping can help any busy mom save some big bucks. And this month, the must-have deal to grab is the free movie ticket promotion at Safeway. Here’s how it works:

  • Head to your nearest Safeway, {or affiliate store like Vons, Dominick’s, Genuardi’s, Randalls, Tom Thumb, Pavillions or Carrs} – and look for the June Dairy Month tags all over the store. #JuneDairyMovies.
  • Use your Safeway Club Card each time you shop during June, and it will automatically add up all of your participating dairy purchases.
  • Once you’ve purchased at least $40 worth of family dairy must-haves like cheese, yogurt, ice cream, and milk, the register will print out a Catalina coupon good for two free movie tickets! Sweet, I know.

The movie tickets can be printed and redeemed online, and will be valid until 8/31/12. It does mention on the ticket that you can use it for a different movie of your choice – but since Abby looooves the “funny guys” in the previous Ice Age movies, that’s what we’ll be heading out to see when it opens locally.

Dairy Month Taco Night

Our Family Night Celebration was a Hit!

Since movie nights at the theater are often a luxury around here, I knew that I did NOT want to miss out on the chance to get free tickets. So I went out shopping for our favorite taco night ingredients – and partnered with the new Just for U rewards program, I was able to save enough on all of the great goods that I bought that I could really stock up on cheese, yogurt, ice cream, and more. We go through a TON of dairy products here – {Abby loooves her string cheese!} – so these were all items I would have purchased anyway. Getting that great free movie ticket coupon at check out was a much-appreciated bonus.

How to get free Ice Age Movie Tickets at Safeway

You probably remember reading about my Safeway shopping trip, and our super fun Tacos and Floats party – if so, you’ll probably also remember seeing a pic of the Catalina coupon that printed out at check out. So – once you get yours too, here’s how it works – easy peasy. Just visit the online rewards site, click the store you shopped at, then fill in your info and add the code found on your Catalina coupon. Then you’re ready to print out your free tickets – and take your family on a great summer night out. Awesome, I know.

How to Pull Off a One Bag Event

Ready for your next event or party to go ONE BAG?… That means a party that creates only one bag of trash for an entire event, from birthday party to holiday open house. With a little bit of smart planning, and some of my fun entertaining tips – Anyone can make their next party a “One Bag Event!” You’ll spend less, waste less, and send less to the landfill. And THAT is something to celebrate!! Keep reading to see how I’ve hosted not one – but THREE! – parties over the past couple of weeks, and was able to make each of them a One Bag Event…

creative party foods for summer bbq

Let’s Talk Trash!…

This is a little peek at our recent celebrations – We had a Pirate Pizza Party a couple weeks ago, to celebrate getting our outdoor space ready for summer. We took the cover off of the in-ground pool to start prepping it for opening, cleaned up the grill, and spruced up the patio area. Then we had a super fun Tacos and Floats night, and got a free pair of tickets to the new Ice Age movie when we bought the supplies. {So cool, right?} Then just a couple of days ago we invited a few friends over for a Hot Dog Bar – which is when I created my little Hot Diggity Dog in the last pic. During the summer we entertain non-stop, which I love. What I don’t love is how much trash piles up after a party. So, I decided to give the Glad One Bag Challenge a try, and see if the tips and ideas they shared could help me cut down on all that garbage. Keep reading to see how we did, and learn how you can do it too…

green your party supplies

Learn How to Pull Off a One Bag Event

Honestly, I did not think we were going to be very successful with this challenge. I mean, we seem to always end up with a ton of trash after every BBQ. But, it wasn’t at all as difficult as I expected – it’s really just a set of small swaps you make that add up to a BIG decrease in what you have to toss at the end of the party. Here are the tips that worked best for us:

  • Invitations: Instead of spending a bunch of extra money on those custom designed invitations you’re thinking about, use an online invite site like Evite.com, Ping.com or punchbowl.com. Or reach everyone where they’re already at – set up an event page on Facebook to give everyone all of the party details – including reminders leading up to the big day!
  • Serving Dishes: Stock up on ‘real’ serving ware – either some fun melamine dishes like the French Bull 12-Piece Melamine Dinnerware Set, {have it, love it, use it all the time!} or choose compostable: sugar cane, fallen palm leaves, and corn are some of the most popular materials. For the past couple of parties I used these great compostable party plates, cups, and utensils – and I was blown away by how sturdy they are. Super cool green geniuses to come up with this stuff.
  • Decorating: Ok, this is one of my favorite ways to creatively cut down on trash. Instead of buying a pile of decorations from the party store that you’re just going to throw away afterwards, think about what you already have that you can use to brighten the party atmosphere. A few ideas – Jars: You could spray paint them and fill with flowers, or use them to hold pre-mixed party cocktails. Food: Use the food itself as the decoration, which leads to almost no waste at all. Make a Watermelon Turtle for summer BBQs, or use chips, dips, and other snack foods to build a Snackadium during football season. You could have the kids color their favorite coloring book pages and hang them like a pennant banner, or just use pics of the birthday child to decorate at their party. Tons of fun ideas.
  • During the Party: Make sure to set up an easy peasy spot to recycle – you could even use a Triple Laundry Sorter lined with Glad Bags {they now have less plastic, and more stretch – meaning you can stuff more into them and have less waste} to make it super simple for guests to toss their cans, glass bottles, and regular trash.

Now – Give yourself a big high five of congratulations! You just saved a ton of waste from clogging up your local landfills, did your part to leave our world a little greener and cleaner for your kids, and saved a ton of money too! How To Build a Hot Dog Bar for Summer BBQs

“It’s no sin to get sauce on your chin.” – Bishop Tutu… As you’ve probably noticed lately, I love any excuse to entertain. As soon as the weather turns warmer, it’s time to spruce up the patio with some fun summer accessories, take the cover off of the pool and the grill, and get ready to party. Summer entertaining brings together all of my favorite things – spending time outdoors in the sun, relaxing and laughing with my favorite friends and family, and of course – great food! Everything tastes better when it’s cooked on a grill, right?

Grillin' Kosher Hot Dogs

“Give a man a barbecue, feed him for a day; Teach a man to barbecue and feed him for the summer.” – Unknown

At our house, we grill just about everything… From BBQ’d chicken and ribs, to foil packets of fresh veggies straight from my garden. And of course, a regular request at my house is for hot dogs – to me, a great grilled dog just tastes like summer, you know? So to celebrate the sunshine this weekend, we decided to do a full Hot Dog Bar, with loads of toppings and extras that everyone could add to our favorite dogs – Hebrew National. I’ve been on a mission for a couple of years now to help my family live a little cleaner, and a little greener, but making small changes. When Mike’s daughters visited a plant that makes and packages hot dogs for a school assignment last year – they came back refusing to eat them ever again after what they saw go into them. And after learning more, I had to agree. So I searched out a better option, and found it in Hebrew National – their products are so much better, without all of the yucky fillers and additives found in cheaper hot dogs. And I love it when a switch is not only better for my families health – but tastes better too!

how to build a hot dog bar

How to Build a Hot Dog Bar

For this little backyard shindig, we decided to build up a hot dog bar – my brother grilled up a ton of Hebrew National dogs in a few different varieties, and I put together enough toppings that everyone could make their own hot dog creation. Here are a few of our favorites:

  • The Italian {Pizza Dog}: Pour pizza sauce into a hot dog bun. Add shredded cheese, pepperoni slices, and olives. Top it with a freshly grilled dog, and enjoy. The kids love these!!
  • The Mexican: This is my favorite – Mix some taco seasoning into your mayo, to make it spicier. Schmear a bit on your bun, add your hot dog, then sprinkle with a mexican blend cheese, jalapenos, and salsa. Sooo good!
  • The Russian: This is always a favorite with the guys… Spread a  bit of cream cheese on a toasted bun, then add your hot dog. Smother it with a pile of sweet relish, and sauerkraut. It’s messy, but they tell me it’s good stuff!

In addition to the above ingredients, you’ll want to make sure to have basic condiments like mayo, ketchup, and a few types of mustard. We also like to have a big crock pot of chilli, bowls of olives, pickles, tomatoes, and grilled onions, and fun sauces like ranch, pesto, sour cream, and bbq sauce. We also like to get a few varieties of buns, since everyone has a different favorite style. The more there is to choose from, the more creative everyone gets. And to encourage creativity, we always give out a prize for the best hot dog creation of the day. Want to see this parties winner?

hot diggity dog

“No great barbecue was ever achieved without enthusiasm.” – Ralph Waldo Emerson

Meet the winner – My little Hot Diggity Dog, made from Hebrew National Franks. Pretty cute, right? {Yep, this idea was all mine – I made him in secret, while everyone was outside grillin’ and chattin’}. All I did was cut up a couple of hot dogs, and put him together with toothpicks. His friendly eyes are a couple of tiny olive slices. And he’s frolicking around in the summer sun on a bed of lettuce. The kids thought this was the coolest thing…

How do YOU enjoy Hebrew National?

Hebrew National is running a very cool promotion on their Facebook page – they want you to “Snap-and-Share” Hebrew National Franks.
