And since it’s Friday – it’s time for another 15 Minute Supper party! I love sharing these easy and delicious meals with you and helping you get a real meal on your table in less time than you could get take out or order a pizza. Now, for my recipe this week… Easy Peasy Chicken Fajitas in a flash!

15 Minute Chicken Fajitas Recipe

I apologize in advance… I don’t have a pretty, plated, “finished” photo of this recipe :( The Mister accidentally deleted a few pics off of my camera. And of course they were the final set of pics for this post. So, you’ll get to see the deliciousness of the fajitas in the pan, but not actually on a plate with sides. Sorry friends! But the recipe still rocks :)

Peppers and onions for quick chicken fajitas

This recipe is so simple, and SO good. First, you chop up a bunch of fresh veggies – lots of brightly colored peppers, and an onion. Then put them all in a big pan and fry ’em up just a bit. Not too long, since you want them to keep some of their crunch.

Making chicken fajitas in a flash

Next, you toss some chopped up chicken in a pan. If you have more time, you can cook up some chicken breasts and slice ’em up yourself. But for this 15 minute recipe I used a bag of precooked, grilled chicken bites. We bought a great big bag, drizzled with a dab of olive oil, and then heated them up in a second pan while the peppers and onions were cooking.

Roasted Garlic Mexican Cooking Sauce

Next come my secret weapon for quick meals – Old El Pas Mexican Cooking Sauce. There are a few different flavors, and I absolutely love them all. I use these a ton to save time in the kitchen. For this recipe I used the Chili & Roasted Garlic flavor. We combined the chicken and veggies into one big pan, poured the pouch of sauce over the top, stir it up, and cook it up. It has such a great flavor – very fresh.

You let them sauce do it’s magic, and bam – you’ve got a delicious batch of easy peasy Chicken Fajitas in less than 15 minutes. Set up a table with tortillas {I’m totally in love with the La Victoria brand Whole Wheat tortillas lately.} I like them just like this – but the kiddos love topping them with cheese, and the mister sometimes likes to add sour cream. You could also add some refried or black beans as a side dish, or some Spanish rice. I also love mexi-corn – chop a few of those peppers up extra fine, and mix ’em up with your canned or frozen corn before heating. Yum!

15 Minute Chicken Fajitas – #15MinuteSuppers

Ingredients

  • 3 large peppers - red, green, and yellow
  • 1 onion
  • 2 tbs cooking oil
  • 1 lb cooked chicken strips
  • 1 package Mexican Cooking Sauce

Instructions

  1. Chop your peppers and onions into strips, and toss them into a big skillet pan. Stir and cook on medium heat for about 4-5 minutes.
  2. Heat oil in a second pan, then cook chicken for 5 minutes while the peppers cook.
  3. Combine the chicken and the veggies, and cover with the cooking sauce. Bring to a boil, then reduce heat to a simmer.
  4. Simmer, stirring often, for a another 5 minutes. Then BAM! You've got yumtastic chicken fajitas ready to go in just 15 minutes!
