And as moms, we don’t want to just fill those tummies up with junk food and empty calories – we want our little ones to get the best possible nutrition, right? But what do you do when your kids don’t want to eat the fruits and veggies that you lovingly serve? {You do serve them “lovingly” right, every time?? Avocados from Mexico

A great ingredient to include in your families meals are avocados!! These fruits {yep, they’re a fruit!} are packed full of the vitamins that your kiddo’s need to grow big and strong – Just 3 slices of a creamy and delicious avocado provides potassium, fiber, folate, vitamin C, E, and B-complex vitamins that help support memory! Now that’s a super snack, right? If you’ve never thought about introducing avocado’s as a snack food for your kids – it’s definitely time to try it out. I’ll share a couple favorite recipes from our family…

    

Tangy Turkey Wraps

Mash up a couple of slices of avocado, and spread onto a flour tortilla, stopping about an inch away from the edges. Top this with a slice of turkey, sprinkle with cheese and grated carrots, and add a bit of your favorite BBQ sauce. Roll it up, cut in half, and enjoy!

Avocado Kabobs

{So fun to say, lol.} Using wooden skewers, thread each one with the following: Olives, Salami Cubes, Mozzarella cheese balls, avocado chunks, and cherry tomatoes. Line ’em up on a tray, spray with a bit of olive oil or balsamic vinaigrette dressing, then sprinkle with parmesan cheese or dried herbs. Kids love the bite-size pieces, and they’re a really fun appetizer for holiday entertaining too!
