Turkey Bacon and Guacamole Sandwich recipe

This week, my recipe is very simple and “cool” – it’s finally turning into spring weather here in central Washington, which means warm afternoons, lots of sun, and much later sunsets. When the weather gets nice, I crave a dinner that is simple and clean – this sandwich paired with fresh fruit and veggies is a perfect fit!

Create a fab dinner with Wholly Guacamole

I used my fave guac brand – Wholly Guacamole – for this dinnertime sandwich. I used store-bought croissants, split in half, covering one half with the guacamole, and the other half with a dab of mayo. Then I piled in the toppings – peppered turkey lunch meat, colby-jack cheese slices, lettuce, bacon from Zaycon foods {trust me, once you try it you will NEVER buy anything else, so be sure to see if you have any events locally!}, plus some sprouts. I paired it with a handful of baby carrots for crunch, and a bowl of fresh berries – strawberries, blackberries, and blueberries – for a sweet treat. Totally fresh and light, but still filling, and packed with vitamins and fiber. Awesome, right?

Who is ready for a girl’s night?

Um, I’m going to guess that most of you ladies are waving your arms in the air saying, “*I* need a girl’s night, Meagan!! Pick me, pick me!!” And I feel ya – I definitely don’t get to spend enough time with my favorite ladies. Between doing projects on the house, chasing an increasingly clever almost 4 year old, watching my nephews, and oh yeah – running a business from home – well, there’s not a lot of time left for fun! But, I’m hoping to put one together soon, and wanted to share some inspiration. {Click here to see where to buy the items in the collage above, on Polyvore.}

  • Dressing up. Doesn’t even always have to be fancy. But something more than sweatpants and a ponytail. {Although I do love that society invented “yoga pants” – which are pretty much socially acceptable sweats. And messy buns becoming trendy have made things much easier for moms too. Thank you, world.}
  • Fun drinks. When you get girls together, it’s a good time for fun, fruity, pink, sparkly, delish drinks – right? And it’s even better if the drink is low cal – which you can do if you use my new favorite mixer, Trop50. {Keep reading to learn more!}
  • Accessories. You need hot shoes – whether they’re amazingly sweet heels that give you some swagger, flats that make you feel comfortably confident, or your most worn-in flip-flops – you need great gear on your heels. Add on things like sparkly bracelets, glittery clutches, and other baubles, to make things more fun. There’s no rule that says you have to stop playing dress up just because you’re an adult :)
  • Music. You canNOT have a girl’s night without great tunes! My favorite is the Bose speaker from Best Buy that plays music via Bluetooth from my phone. But anything that gets the night movin rocks. {And if you’re not using Pandora yet, you’re totally missing out!}
  • Movies. I love having a great “girl” movie playing when I have friends over. Next up on my must-watch list? Steel Magnolias. Can you believe that it was a Christmas gift from my bloggy buddy Dusty from As Mom Sees It, and I still haven’t gotten a chance to watch it? #NeedToMakeTimeASAP

I’m a big fan of pasta. More often than not I do a pasta-bake. But there are plenty of nights that I need to get dinner on the table in a hurry, and a baked dish would take WAAAAY too long. So, since pasta is my specialty, and I recently came up with an awesome new recipe using Gourmet Gardens products, I thought I’d share my 15 minute supper recipe so you guys could do dinner in a flash too. Because I totally love you guys. :)

How to Make 15 Minute Chicken & Italian Herb Fettuccine

The ingredients for this are super simple – mostly things you have on hand. Unless maybe you’re the type who haven’t yet heard about the amazingness of Gourmet Gardens. They make it so easy to have fresh herbs/spices on hand even when you can’t grow them yourself, or can’t get ’em fresh locally. And speaking of local – I try to buy locally made foods as often as I can. We bought half a cow from a farmer here, I love these breadsticks from Seattle International Baking Company, and I am the BIGGEST fan of Tillamook, which is made over in Oregon. {Also, if you can’t buy meat locally, do NOT miss the sales from Zaycon Foods. Best quality and price you’ll find. Awesomesauce, seriously.}

Gourmet Gardens Fresh Herbs make amazing pasta recipes! #15MinuteSuppers

Fresh Made Easy – Gourmet Gardens

Just to give you a little info on these Gourmet Gardens ingredients: They are fresh as all heck, and stay good in your fridge for months, versus actual herbs that will die quickly, which = waste of money. They’re gluten-free {At least all of the ones I’ve tried are – there may be some that aren’t, be sure to check labels if this is important to you.} They’re all made from fully organic ingredients. And they taste amazing. As close to fresh as you can get without picking ’em in the garden. Also – see in this pic that the pasta doesn’t have chicken on it? That’s because I make up a big batch of the pasta, then have toppings in separate bowls. I love it with chicken, obviously. But if you could eat it as is, or add veggies like steamed broccoli, peppers, peas, asparagus, or whatever you have on hand. Top it with different types of cheese. Serve it with breadsticks or garlic bread, or maybe a salad? Mix it up and enjoy it however you want – it’s a great base to add anything to!

The Chicken & Italian Herb Fettuccine Recipe

This recipe takes just 15 minutes from start to finish – maybe slightly longer when you have kids running around, a UPS guy at the door, little ones who want to “help,” or other distractions. But the actual meal prep is just 15 minutes. And it is gooooood. It’s got a little zing to it – in a good way. Wakes up the taste buds. I think it’s because the fact that the Gourmet Gardens Italian Herb paste is just so darn fresh – almost unexpectedly so. Love it.

Chicken & Italian Herb Fettuccine – #15MinuteSuppers

Ingredients

  • 1 box fettuccine noodles
  • 1/2 cup sour cream - {I seriously recommend Tillamook!}
  • 2 Tbs olive oil
  • 1/2 cup grated cheese - I used an Italian blend
  • 2 Tbs Gourmet Gardens Italian Herbs
  • 1 Tbs Gourmet Gardens Garlic
  • 1 package pre-cooked grilled chicken, or veggies of choice, or any other leftovers as desired for toppings

Instructions

  1. First, start your noodles cooking in boiling water - cook for about 12 minutes.
  2. Hint: At this point you can also put breadsticks or garlic bread in the oven, or toss together a quick salad.
  3. While you wait, mix up your sauce - add sour cream, olive oil, cheese, and Gourmet Garden seasonings to a bowl. Stir until well mixed. It won't look like a lot - but it is more than enough, trust me :)
  4. Yes, I just put a smiley face in my recipe.
  5. Your noodles are now ready - drain, and mix the sauce into the noodles. Mix well.
  6. Now you can top with the pre-cooked grilled chicken strips, or veggies.
  7. Be sure to sprinkle with more cheese - Italian blend, Parmesan, or Mozzarella are all good choices.
  8. Eat it up and enjoy!

15 Minute Tortellini Soup with Tomato & Red Pepper

I’m a soup-junkie. I could perhaps even be called a soup-a-holic. A warm hearty soup is such a great comfort food in cold weather – but a simple soup is also such a perfect meal in the warmer months too, paired with a crisp cold salad. The majority of soups that I make are done crockpot style – I love to just throw it all in, let it do it’s magic while I work the day away, then have it ready to enjoy when I’m ready. But, I’m also becoming a fan of super fast {should I say, SOUPer fast? Lol…} soups that I can whip up in a flash on a busy night. Because there are plenty of times that I totally didn’t plan ahead for dinner, or lost track of time, and have a gang of hungry savages rioting for food, stat. So – today I bring you another of my favorite 15 minute suppers, Tortellini Soup with Tomato & Peppers.

Tortellini Soup with Tomatoes and Pepper

OhmyYUM, right? This soup is seriously so darn simple, but the flavors combine quickly to make it taste like it’s been simmering all day. And it only takes a handful of ingredients – chicken broth, marinara sauce, a bit of butter and some sprinkles of spices, plus some frozen tortellini. No real prep, you just kind of toss it all into a big pot, stir it up, and in 15 minutes you have an absolute delish dinner.
