I’ve been posting a few back to school giveaway posts this week. And I know a ton of other bloggy moms around the country who have kids going back to school in the next week. But – here in Central Washington, we’re still in the upper 90’s to 100’s, and have almost a month left of summer vacation left. Which means, I’m still in a summer state of mind :) We just got back from an awesome camping trip at Rimrock Lake {have you seen the pics on Instagram? It was so gorgeous.} And I just can’t feel the whole fall mindset yet. Which is why I’m still in the mood for light, simple, and easy food and drink recipes. Check out a new fave of mine – it’s even low-cal. Which is mucho important when it’s still swimsuit season here.
Low-Cal Lemon Drop Martini Recipe
I love anything lemon. From homemade cleaning products, to lotions [my fave, is Burt’s Bees Lemon Butter Cuticle Cream!} to food and drinks, I love lemon. Always have, since I was a little girl. I haven’t ever made my own lemon drop drinks at home, which is funny – I’ve ordered them many a time when out for a girl’s night, and we entertain a TON, year-round. I guess I didn’t realize how darn easy they were. And with the help of Sweet’N Low, they’re super low-calorie, and even diabetic-friendly too. Check it out:
How to make a Low-Cal Lemon Drop Martini
So, it’s super duper crazy-simple to make these. You need your favorite type of vodka. Some lemon juice – I prefer fresh squeezed, but you could totally use bottled lemon juice, or an unsweetened lemonade if you prefer. Add some Sweet’N Low to sweeten it up a bit, without adding a ton of calories. And if you like a little fizz – add a splash of ginger ale or seltzer water.
And that’s it! You’ve got a super refreshing, delicious, low-cal, diabetic-friendly drink – in just a couple of minutes, with very little prep. What more can you ask for, right? :)
Ingredients
- 2 oz {1 1/2 shot glasses} of your favorite vodka
- 1 oz {a little over half a shot glass} of fresh squeezed lemon juice
- 3 packets of Sweet'N Low
- 1 sliced lemon
- A couple handfuls of ice
Instructions
- First, pour a shot or two {depending on how strong you want your drink} of vodka into a cocktail shaker.
- Next, add some fresh squeezed lemon juice. In a pinch, if you don't have fresh lemons, just use bottled lemon juice, or even lemonade. My fave lemonade for this would be Simply Lemonade brand.
- Add one packet of Sweet'N Low.
- Now add a slice or two of fresh lemon, and muddle it in the shaker - if you don't have a muddler, use the end of a wooden spoon to squish it all up a bit.
- Cover with ice, about halfway full.
- Shake for about 30 seconds, to be sure it's all nice and cold.
- Coat the rim of a martini or other glass with another lemon slice, and let the juices flow into the glass too. Then roll the rim of the glass on a plate of Sweet'N Low to coat it.
- Pour the shaker contents into your martini glass rimmed in Sweet'N Low, add a lemon for garnish, and enjoy!

It is kinda tart ;) I like it that way – reminds me of like, a Sweettart candy? But I hope adding the extra packet of sweetener made it just right for you!
