I’m a soup-junkie. I could perhaps even be called a soup-a-holic. A warm hearty soup is such a great comfort food in cold weather – but a simple soup is also such a perfect meal in the warmer months too, paired with a crisp cold salad. The majority of soups that I make are done crockpot style – I love to just throw it all in, let it do it’s magic while I work the day away, then have it ready to enjoy when I’m ready. But, I’m also becoming a fan of super fast {should I say, SOUPer fast? Lol…} soups that I can whip up in a flash on a busy night. Because there are plenty of times that I totally didn’t plan ahead for dinner, or lost track of time, and have a gang of hungry savages rioting for food, stat. So – today I bring you another of my favorite 15 minute suppers, Tortellini Soup with Tomato & Peppers.
OhmyYUM, right? This soup is seriously so darn simple, but the flavors combine quickly to make it taste like it’s been simmering all day. And it only takes a handful of ingredients – chicken broth, marinara sauce, a bit of butter and some sprinkles of spices, plus some frozen tortellini. No real prep, you just kind of toss it all into a big pot, stir it up, and in 15 minutes you have an absolute delish dinner.
Another thing that makes this soup so fab is that it’s easy to change it up each time you make it. I use different combos of seasonings, new varieties of tomatoes and sauces, add more spice or less, toss in leftover veggies, and mix it up by using other types of noodles – instead of cheese tortellini, why not try a sausage or beef? Or swap out the tortellini for mini raviolis, or one of my faves – a cheese and spinach filled pasta? The possibilities are endless. And, I enjoy the research of trying them all out…. :) I’m not one for complicated super-precise recipes, so I always write them up in a way that allows you to customize them, the way I do when I cook.
Ingredients
- 2 tablespoons butter
- Seasonings of choice: I chose 1 teaspoon onion flakes, 2 teaspoons red pepper flakes, dash of ground black pepper, and a couple shakes of basil. Mix 'em up with whatever you're in the mood for
- 1 jar of marinara sauce
- 1 cup diced Italian Style tomatoes
- 4 cups chicken broth
- 1 package frozen tortellini {my bag was 1lb 3oz}
Instructions
- Melt the butter in your pot over medium heat for about a minute, then add your seasonings. Stir to mix.
- Pour marinara sauce into pot, and top with the diced tomatoes. {1 cup is about half a can, usually.} Next, pour the chicken broth in, and stir it all up to combine into a soupy mixture while bringing it to a boil.
- Once your soup mixture is at a rolling boil, add your bag of frozen tortellini. Bring back to a boil, then cover and reduce to simmer.
- Simmer for about 3-5 minutes, until tortellini are tender. Top with grated Parmesan cheese if you like. Serve with a salad and/or crispy bread. {Directions included below!}
Now, you’ll notice in the pics that I have some yummy crispy bread with my Tortellini soup, and I mention in the official recipe above that I’ll tell ya how to make it. It’s crazy-simple. Buy a baguette, french bread, or sliced specialty bread – whatever you’re in the mood for. {You know I don’t like to tell ya what to do.} Heat your oven to 350 degrees, brush your bread slices with olive oil, or another awesomely healthy oil like my new fave, LifeOiL, and sprinkle with a bit of garlic salt and pepper. Put ’em on a pan, and bake ’em for about 5 minutes. They’re perfect for dipping into soups, or topping with cheese or other yumminess for appetizers.
