I’m a busy mom, with a lot of chaos in my household. I’m the manager of so many things in my home – I manage my business, I manage the finances, and I {usually} manage to keep the house organized and clean. With all of the things going on each day, I totally rely on some great routines we have in place, to keep things as simple and streamlined as possible. And one of those routines ismeal planning – I like to plan meals out a week in advance, shop just once that week for everything we’ll need, and make sure that the recipes that I choose are quick and easy enough to be done even when I’m rushing to meet deadlines.

A recent favorite here in the Paullin house is this super simple Shrimp Scampi. If you know me, you know that I am not a seafood fan – so you might be wondering why on earth I’m cooking up some shrimp? Well, the Mister and the little one love the stuff, and I had an awesome new product I wanted to try out, so I figured I’d get a little adventurous and whip them up a surprise dinner that they’d love. And ohmyHECK did they love it! It’s seriously quick to make, with really simple ingredients. And – one of them is amazingly simple, check it out:

Ok, I’m not a totally organic mom. But I have been on a mission the past couple years to live a cleaner, greener, healthier life. And a big part of that was taking the time to notice what is actually in the products we use each day. Did you know that other butter spreads have up to FIFTEEN ingredients in them? In butter? Crazy, I know. But this Land O’ Lakes Butter with Canola Oil has just three – sweet cream, canola oil and salt. So it’s REAL. This is super important to me. And, those 3 simple ingredients solve another pet peeve of mine – butter that’s not spreadable. You know, you take it out of the fridge to spread a big spoonful on your morning toast or muffin, and it just sits like a big hard rock? Well, this stuff spreads so smooth right out of the package. I am LOVING that. So, I wanted to create a recipe that was as simple and fresh as it’s ingredients, to really give it a chance to shine….

How to make a simple shrimp scampi

Ok, this idea is based on the Shrimp Scampi from Red Lobster, since that is one of Abby and Mike’s very favorite foods. I searched online to find a ton of copycat style recipes… And then created a simple version of Shrimp Scampi from what I found. I wanted it to be an easy week night meal that used simple ingredients, and could be made quickly. There are many nights where I cook for them, and eat a frozen diet meal and salad {we open up the pool for summer in just a couple more months!} – so on those nights I make what they like most. Simple Shrimp Scampi Recipe

Ingredients

  • 1 tablespoon of olive oil
  • 1/2 cup Land O' Lakes butter
  • 2 tablespoons garlic
  • 1 lb medium shrimp, peeled and deveined
  • 1 tablespoon parsley
  • 1/2 a fresh lemon - for juice
  • 1/2 cup Parmesan & Romano cheese mix

Instructions

  1. First, you add your olive oil and butter to a pan over medium heat, and get it nice and warmed up.
  2. Next, add your garlic - cook, stirring often, for about two minutes. You don't want it to brown or caramelize.
  3. Then add the shrimp and parsley to the pan, and squeeze the juice from half of a lemon over the top.
  4. Cook the shrimp until pink - about 8-10 minutes.
  5. Once the shrimp is cooked fully, sprinkle with Parmesan & Romano cheese mix.
  6. Cook for another two minutes - then enjoy!

  6. Do you put this over pasta? I want to make it for my mom’s birthday dinner, but am unsure if it would be “creamy” enough to put over pasta. Also, should I double or triple the recipe if it is for 5 adults and 2 children?

      You could totally put this over pasta! And the recipe made enough for 3 adults and 2 kids… So you might want to double it for more :)

  7. This sounds great! I agree with you on the butter issue. We had a nutritionist come to our workplace and she said it is so much healthier to eat “real” food in moderation than diet food filled with chemicals as no one really knows how they affect us in the long run.
