“Mom, what’s for dinner??”… Isn’t that one of the most dreaded questions to hear after you’ve already had a long day? You don’t want to waste money on wasteful calories from a fast food place, again. But you don’t have the energy to spend an hour home-cooking a great meal either. So, what’s a busy mom to do? Well, if you’re like me, you keep a pantry stocked with supplies that make it easy to create “kinda-homemade” style dinners. New! – Kraft Velveeta Cheesy Casserole Dinner Kits
Yes, it’s true… I use boxed meals and other convenience foods in the kitchen. I love to cook, but I’m also a crazy-busy work from home mom. So there are always at least a couple of nights a week that I take short-cuts, and rely on some great products like these amazing Kraft Velveeta Cheesy Casseroles. Seriously, they are so good. I was incredibly impressed. {And see that coupon on the front of one of the boxes? Look for the ones with those – and use ’em at check out! Sweet little savings right there.} And while they’d be great right out of the box, let me share a few tricks that I use to make them a little more homemade….
Super simple dinnertime solution
There are three varieties of these new cheesy casseroles – Shepherd’s Pie, Chili Cornbread, and Chicken Pot Pie. The first two start with ground beef, and obviously the Chicken Pot Pie starts with…. Chicken, lol. You need about a pound of the meat you’re using, and brown it in a pan, easy peasy. Next, you’ll add the other ingredients right there in the same pan – the directions are incredibly simple. But, I added a few extra ingredients of my own on the Chicken Pot Pie – after I added the included veggie packet and spices, and poured in some milk to make the sauce, I also tossed in some frozen corn, green beans, and peas. Then I added a little ground black pepper too. Love pepper. You bring it to a quick boil, let it simmer a bit, then pour it into a casserole dish. Next, you add the super creamy Velveeta cheese over the filling, and top it with the included biscuit mix. Then you just place it in the oven for 15 minutes, and just like mom-magic, you have….
Cheesy Chicken Pot Pie
Doesn’t it look super yummy?? I – honestly, truly, amazingly – was impressed. The texture was perfect. The sauce was SO good – the cheesy flavor of the Velveeta really added a great zing to it. I’d never put cheese in a pot pie before, but this was brilliant. Even the {incredibly picky} Mister loved it – he thought it was a from-scratch recipe. Awesome, right? And, here are a couple other options you could try:
- Spice it Up: Add some chopped peppers or some salsa to the filling mix. And just a dash of taco seasoning or chili powder to the biscuit mix. Soooo good.
- Italian Style: Add some chopped veggies, like zucchini and onions, plus a can of diced Italian style tomatoes. Shake a little bit of basil into the biscuit mix too.
- Southwestern Style: Add your pick from olives, black beans, or Mexi-style corn. Top with sour cream and salsa when serving.
A boxed mix can save you SO much time at dinnertime. And with a few little add-ins, you can create a really delicious dinner for your family – quick and simple! Hungry yet?
