Here is the recipe for Apricot Chicken that just came out today… I am super excited to make this tonight!
Ingredients:
- 2 tablespoons Pure Wesson Canola Oil
- 4 boneless, skinless chicken breasts {4 breasts = 1 pound}
- 1 teaspoon dried Italian seasoning
- 1 1/3 cup reduced-sodium chicken broth
- 1/2 cup apricot preserves
- 1 tablespoon cornstarch
Directions:
1. Heat oil over a large skillet over medium heat. Sprinkle chicken with Italian Seasoning. Add to skillet and cook for about 10-15 minutes, until center is no longer pink.
2. Stir the remaining ingredients together in a small bowl until well blended. Add to the skillet with the chicken. Cook 3-4 more minutes until the sauce is thickened.
