Simple Appetizer: Chicken and Waffle Bites – #EggoWaffleOff

For one week I’m sharing a new “out of the box” waffle recipe each day. {Actually, we’ll have more than one each day this weekend – watch for them!} We’re creating all of this super fun stuff to celebrate the Great Eggo Waffle Off contest – find details below if you want to enter too, or just check out all of the awesome entries. Today’s recipe was SO much fun! We entertain. A lot. Like – a lot. And often these are last minute, impromptu get togethers. So I’m always searching for fun new appetizers that can be made really quickly, from simple ingredients we have on hands, that are as popular with kids and adults. Chicken and Waffle Bites

Now, let me start by telling you that these were made in a flash, with a cranky 2 year old grabbing at my legs the entire time. She’s had a rough week, and hasn’t been feeling that great, so I invited a couple of friends to bring their kiddos over for the evening to play, since the weather is finally so gorgeous. {TWO record-setting highs this week, wow!} I needed a quick appetizer – something the kids could grab in between playing, and the moms could enjoy while sitting on the patio watching them. So – I grabbed a box of my personal favorite Eggo waffles, the Simply Eggos, with no artificial colors or additives. I toasted up a dozen, and cooked up some crispy chicken strips in the oven.

Build a better appetizer

Once the chicken strips were baked, and the waffles were toasted and ready to rock, I assembled the Chicken and Waffle bites. To start – I cut the waffles into small squares, and sliced the chicken strips into bites. I layered the chicken in between two waffle squares, and then held them together with little colored toothpicks. Once I had a couple of plates filled, I drizzled some warm maple syrup generously across the top of both plates. We’re big fans of chicken and waffles for dinner, so I figured that making them in bite-size appetizers would be delish too – Boy was I right! The moms AND kids devoured these in a flash!
